Gutless method and pack out. Distance to pack out determines whether to debone or pack the quarters bone in.
I'm getting to the point where it's but a few minutes additional to debone the legs, shoulders & hams. I may simply debone going further.
I'm not a tongue, liver, heart guy. That feeds the scavengers. The tenderloins are as far as I go digging in a bit further than basic gutless unless with another who digs it, s/he may chop away.
