Pellet grilled walleye fillets

fried some fish the other night but I just felt sick afterwards with all of the oil so I figured I'd try something healthier.
Followed this recipe for catfish fillets from GMG-Fast and Easy and it was delicious! not much of a smokey flavor, so next time i may smoke at a lower temp for a bit then finish it off at the high temps

For the rub, I used MeatEater's mermaid rub, that stuff was golden; for the brine, i just used equal parts water, lemon juice, and milk


INGREDIENTS:
Cat Fish Fillets
GMG Fish Rub
Lemon Juice
Milk
Water
In spite of the fact that these Catfish rank among the most aesthetically-challenged, you can really make a tasty, healthy meal out of them. They have a ton of protein and are an excellent source of selenium, Vitamin B-12, potassium, and niacin.

Let’s Get Started:
Buy the farm-raised fillets from your grocer, and brine them in the refrigerator in a mixture of milk, water, and lemon juice for at least 30 minutes before you grill them.
Then pat them dry and sprinkle both sides with GMG Fish Rub.
Grill the filets on a frogmat or a piece of aluminum foil at about 400°F (204°C) for 4-5 minutes per side or until the fish flakes with a fork. Remove from the grill and drizzle with lemon juice. Serve immediately.
 
this is the first i've heard of anyone trying the meateater spice mixes. not suprised to hear they're good.

anyone else try any?
