Meat Mystery Solved

Only experience i have with antelope is two does harvested off a small ranch with irrigated alphalpha fields. They both tasted incredible. We grilled the tenderloins within a couple hours of harvest and they were extremely tough but taste was fine. We had a couple locals jokingly giving us a hard time hunting antelope for the meat. I' d do it again in a heartbeat.
 
I had a couple friends who used to work for a processor when I lived in Wyoming. We would go in after hours or on Sundays sometimes to work on our own animals. They had a drop off option if people brought game in on Sunday and they would get to it the following day. The amount of unprocessed pronghorn was frightening. People would drop off whole critters and leave them on the floor, guts still inside and hide still on. No wonder antelope get a bad rap!
