Dinkshooter, thanks for the info. I had run across those Alpaca rafts while researching boat options as well. With them starting about $600 a pop that might be out of the price range. Another one I had looked at that would work awesome if I had the budget for it is a Big Sky Inflatables Water Master:

They are even more expensive, starting at well over $1k, but would be perfect for this trip. Currently I'm considering something in between what Carl had with the inexpensive Seahawk rafts and those Alpaca Rafts budget-wise. Sevylor makes a inflatable canoe/kayak that is relatively light, appears durable and seems like something I would use for more than just this trip:
