In a crock pot, start heating 3 cups of beef stock, 1 1/2 cup dry red wine, 2 tbl spoon garlic powder, 1 tbl spoon black pepper, and 1 tea spoon thyme.
Cut 2 or 3 lbs elk meat into bite size cubes (1 1/2") clean off all grissel & sliver skin.
Rinse off meat in water & drain, then roll them in flower and brown them in a frying pan with 1/2 inch of olive oil.
Dump the browned elk meat in the crock pot with a tbl spoon of butter, and some of the drippings from the frying pan. Cook on high for four hours. Then add 1 onion, 2 tomatoes and 1/2 lb mushrooms, all chopped up. Cook for another hour or two.
