Anyone seen this video? Saw on an iowa site. Pretty incredible stuff and amazing all fingers are intact. It must either be the apron or the hook.

I need to give those hooks a try. Anyone have experience with which one...length, right/center/left? 2 many darn options.

Wow pretty amazing what an experienced hand can do... the only problem I see happening is if there was any hair on the carcass... Id assume he burnt it off first.

I don't know that there is any prize for the fastest, but it can be done quickly.

Must be the apron as I've had one of those hooks for quite a while and ain't nearly that fast.

Apparently if you go that fast your knife never has time to get dull and need a little retouching.
