Meat is becoming softer. Pushed it down more under the liquid and removed the cast iron top. Covered the grill with very little flow. Still releasing some smoke from the grill.
Heat is not the goal here. It got too rolling hot so I trimmed the vents way down for a gentle roll. Meat is cooked. This is about finishing and adding flavor.

Once the meat will start to pull apart with a medium - hard push, push 80% of the meat past the juice line while adding garlic and cumin.

I was lucky and got drawn for an Arizona Bull Archery Tag. I plan to chase bugles in the morning and hunt isolated wallows and tanks during the afternoons. I intend a ground blind in to those locations up to 2 miles.

Update…. The tag info was not supposed to have been shown. They were running test. If your card was hit, you were drawn. Do not panic like I just did for it now showing no tag. - per fish and game customer service.
I am sick to my stomach. It still says pending on my account, my charge on my card is still there. But it now says no tag where it said tag 55. All weekend
