Shank Meat to Bone Ratio

I have several shanks I need to get rid of. The plan is to corn them, then simmer until perfect. What percentage of the weight of a shank do you think is the meat?
 
Hmmm... I have all 3 major species, elk, deer, & antelope. If I were mixing the brine today, I'd base my pink salt measurements on the guess that the bone is 25% of the shank weight. I may just debone them all and take measurements for future reference. Those bones are going to occupy a lot of space.
