Marinated Elk roast

1 (6 to 8) pound elk roast
salt pork, thinly sliced
5 slices bacon
2 tablespoons garlic powder
2 cups dry red wine
2 bay leaves
fresh ground pepper
salt to taste

Make 1 inch deep slits across roast and force slices of pork into each slit. Rub roast with garlic powder, salt pepper. Place in heavy duty foil in roasting pan and pour wine over meat. add bay leaves and marinate in refrigerator 8 to 10 hours, turning occasionally. When ready to roast, arrange bacon slices over top and seal foil. Bake at 300 degrees for 2-1/2 to 3 hours. Uncover last 30 minutes to brown. Serves 8. Recipe from a freind
