Ken Jr. slow & low cured 25 lbs of venison summer sausage on the big offset at the office today. Brought the sausage to 155* & let it cool on a stringer across the bed of his truck.

Looks fantastic.Raining outside and the charcoal smoker held at a perfect 140-160 for 7 hours. Some near perfect chipotle mule deer thick cut jerky was the result.

I’m a fan of cowboy Kent too!I winged it but used this video as a guide, Ive picked up a lot of stuff from Cowboy Kent and Beag over the years.
