Duck tacos

this recipe started with a good organizing of the freezer. While digging in there bringing everything older to the front I found two packs of goose leg/ thigh and duck leg/ thigh meat with slightly blown seals. Little air in the vacuum bags. Most likely from getting shuffled around in freezer. I figured the best option would be to pressure cook them pull the meat off then make something out of it. Figured in this way if any freezer burn taste could hide it. Once cooked it was delicious and tender. But what to do with a big bowl of duck and goose meat. I thought of birria tacos and slightly adapted it. I made some homemade corn tortillas and put duck meat and quessa birria cheese inside and fried topped with a cilantro/white onion/tomato with lime juice and some homemade chili sauce made from cooked down Pasilla and guallijo chilis the result was amazing even the kids stuffed themselves. Anytime someone says they don’t like duck I know they just don’t know how to prep and cook it.
