Crappy Chinese is one of my favorites! We have a grocery store chain in the Midwest, Hy Vee, that has the best crappy Chinese food! To bad the closest one is 1.5 hours away.

I have never done wild game brisket. How do you plan to cook it? Smoke? Braise? I would love to see a picture tomorrow when it’s done.

It would be perfect for a smoker, but I don’t have one :-(

Rub is liberal amounts of salt, sugar, marjoram, and onion powder. I topped with some pads of butter and wrapped in foil. Will try 275 degrees for 4 hours in the oven and see how it turns out. Minus the silver and tallow I trimmed off I have about 3 lbs raw meat.

Took it out at 3:45 and it cuts with a fork. A little Greek yogurt and a homebrew - I get to eat like a king
