How do you do it so that it wont mess up the fur or feathers?

The best way is to blow high pressure air on it using a compressor. If you don't have a compressor then the next best way to clean it IMO would be to use a shoe brush. Work the brush in the direction of the hair. Generally a rag with a touch of furniture polish will do a nice job cleaning antlers up. What kind of big game mounts are you referring to?

Antlers, Pheasants and fox for now. Hope to add more this fall. Thanks for the tips.

Funter I use a dust mitt on the fur/feathers and compressed air (can like they use to blow crap out of computer keyboards). Then I use one of those Swifter (sp?) wipes for the horns which cleans em' up nicely!
