I was starving so I stopped at the gas station the other day. Normally our local gas station has very good food ready to go but with Covid-19 rules they haven’t been able to keep up with it. All they had on the warmer were burritos. They were very good. So I figured I could just make some freeze them instead of paying $3.50 for 1 burrito! Here is what I did.
1. browned two lbs ground Meat, I used elk.
2. Add taco seasoning for 2 lbs of meat. Store bought or homemade would work
3. Melt in 2 cups shredded cheddar cheese
4. In a food processor purée canned beans. I used a 3 bean chili mix
5. In large bowl Mix with meat.
6. Lay out a piece of tinfoil about the size of a tortilla shell. A burrito sized tortilla shell on the foil. Place about a 1/3 cup of the meat/bean mixture onto the shell and spread evenly. Roll The tortilla shell folding in both ends to keep meat mixture inside. Wrap in tinfoil.
7. Freeze 4 or 5 together inside a gallon ziploc bag.
8. To reheat, remove from tinfoil and microwave for 90 - 120 seconds. Or leave wrapped in tinfoil and reheat in oven.
10. It’s better then gas station version and the picture. I promise!
