It was a nice day here in Northeast Iowa so we broke out the kayaks and headed to a coldwater river. Very few people realize that northeast Iowa has some really great trout fishing in these cold streams. We limited out with 5 fish each of varying sizes. Two were really nice trout. Not as big as those western trout I am sure.

Cooking one on the grill. Wrapped in tin foil. Stuffed with lemon wedges and onion. Inside and out are coated with a brown sugar & honey paste. the fish also has a piece of bacon on each side. Any other great trout recipes out there. Got 9 more to eat.

Trout was fantastic when done on the grill last night.

Here is the recipe for those interested:

BEST GRILLED TROUT
------------------

4 whole trout, cleaned
8 strips of bacon
1 lemon
1/4 cup brown sugar
1/4 cup maple syrup
1 med. onion, sliced

Slice lemon in half and slice half the lemon into slim
wedges. Mix Maple syrup and brown sugar together and brush
inside of trout with mixture. Stuff the trout with lemon and
onion slices. Brush more maple syrup mixture on outside of
fish. Lay out a large enough piece of aluminum foil to wrap
the fish completely.

Lay a strip of bacon down and place fish on top of it, lay
another strip of bacon over the top and wrap loosely in
aluminum foil. Place on grill over medium low heat for 15-20
minutes until bacon is done and fish flakes. Squeeze other
half of lemon over fish or garnish with wedges from other
part of lemon. (You can also add other spices/seasonings to
suit taste. I enjoy some cayenne in mine)

That recipe sounds pretty darn good! I flip around with trout. Hem's way and yours. Last I had, we knocked a couple grouse and a few pan cutty trout. Had some olive oil spray, found some huckleberry and scrounged some Ritz crackers.
Crunched the crackers, coated the pan with olive oil, rolled the trout in the oil and coated with crunched crackers. Had one of those camp multi spice containers, and added the pepper, bit of cayenne pepper, and garlic.
Made a nice glaze from the huckleberry and had ourselves a "fin n feather" dinner. :)

How the heck was that pic taken? Your friend standing in his kayak or? Great looking kayak rig! Looks like a great time!

I bet that bacon gets a nice sizzle on the skin. Good stuff. Thanks for sharing.
