I hear ya. Next friday is opening day for me in Saskatchewan, I drew a tag in a zone that only has 25 tags and probably 4000 applicants! Oh, not to mention I just got a huge new job and start next monday. Condition of signing was the days off for my elk hunt!

All I do is thaw it, coat it with thick salt/pepper and wrap it in plastic wrap for a night, then I either BBQ it or braise it and roast or sometimes pan fry with a little butter.. absolutely perfect.
All straight up for me, 1 lb of ground and I double wrap it with plastic wrap and then a wrap with freezer paper. When i'm going to make burgers or something I will thaw it a little and put it back through the grinder, usually with some smoked bacon when I am making burgers. Extruded jerky...
