We don’t have as much forest as we should, but we’re currently planting lots of ground up so the future of the forest industry is very bright in Scotland!
The Red deer has the strongest tasting venison with the Roe deer having the least tasty but most tender venison. My preference for eating is Sika or Fallow as its still flavourful but tender, and Sika and Fallow do very well on poorer ground so they often have much more fat than Red or Roe...
