Raw Preparation Dishes

Anybody have any recipes for raw dishes like tartare, carpaccio or anything else? I know I'm not the only who likes this stuff.

I do ceviche a lot. Thata pretty basic: fish plus veggies plus lime juice.
 
I have made some elk tartare in the past and everybody liked it. I just adapted a generic recipe
 
My family has a dish we call “Parisa” its Alsatian. We take ground meat; leaner the better so venison is perfect, chopped onions, salt, fresh black pepper, cubed American cheese, fresh lemon juice, and if u want chopped Serrano peppers. Mix it all together, let sit in the refrigerator for about 30min, eat w crackers n a good beer; awesome for around a campfire telling lies!!!
