Christmas Cooking has Commenced!

Snacking on smoked Alaskan silver salmon:

Elk roast - ready for prep!

Slits filled with sliced garlic cloves. Yet to come; slathering the roast in olive oil, then seasoning with black pepper, minced garlic and a tiny bit of salt. :)

325 for about an hour and ten. It turned out "rare" and good. The veggies were good, but could have used another 10 min. All in all, I'd rather under-cook a bit instead of over-cooking. :)

Wife got an end piece that was more "medium-rare" while my son and I enjoyed the less-done "rare" pieces. :)

We all enjoyed.
