Does anyone have a good recipe to brine and smoke a whole Canada goose with skin on? I plucked one the other day and want to give this a try. Haven't found much online. Thanks.

Brine is one of those things that I typically just use salt and sugar water. Maybe a touch of vinegar, soy sauce or Worcestershire sauce.

The one I made for T-day was brined for 72 hours.

Dry rubbed with southwest spices and then basted in the smoker for 8 hours with blueberry syrup.

I also put halfed oranges in the cavity for the smoking process.

You can use anytime of syrup for a baste and it turns out well.
 
I plucked, cleaned and deep fried one once. It was like trying to cut into a basket ball. Smoking would have been a better method for sure. Let’s us know how it turns out.
