Didn't have any meat thawed out last night so I figured I'd try to do a sous vide type warm up and sear.
Took the frozen piece of backstrap and put it in a gallon ziplock with some Montreal steak seasoning and smoked paprika.
Filled a pot of hot water from the sink that was about 125 degrees. Put the steak in the water with the stove on low stirring periodically with the bag and turning off the stove when the temp went above 135 and back on when it hit 125.
After about an hr the steak was nice and warmed up. Seared it on the cast iron with butter pulled it around 140 and let rest a few minutes.
Went from frozen to perfect in about and hour and 15 mins.
