Flat Iron venison Steaks are well worth the effort. I saw a video on butchering that showed the removal and prep of the flat iron from the deer shoulder. I decided to give it a try. I'm familiar with a beef flat iron but never knew where it came from.
Man, these steaks cooked on a cast iron skillet were fantastic. It is a bit time consuming to prep because once removed in one piece the steaks need to be separated at a fascia line.
If you process yourself you gotta try this or maybe everyone already does and I'm late to the party. If you pay the butcher ask for it, they're pretty small but you get four per animal.

I have front shoulders hanging right now and saw the same video from the bearded boys. I am looking forward to grilling this cut soon. I would imagine that 90-100 seconds on each side on a hot grill will be just about right.
