And yes, that Hodges guy is good people. Only took me two short texts last year to convince him to drive 6 hours roundtrip to pack out a bull.

Not sure quite yet. I'll probably use Hank Shaw's recipe from Buck Buck Moose and serve with risotto or polenta.
