Depends alot on the species.
I did osso bucco with the shanks on my mountain lion, and it had amazingly meaty shanks, like twice the ratio of anything in the deer family.

Hmmm... I have all 3 major species, elk, deer, & antelope. If I were mixing the brine today, I'd base my pink salt measurements on the guess that the bone is 25% of the shank weight. I may just debone them all and take measurements for future reference. Those bones are going to occupy a lot of space.

The bones/marrow has a ton of flavor in it. Combining that with all of the connective tissue is what makes shanks so awesome, IMO.

I'm not sure a brine is necessary when making Is Osso Bucco.
That's a very good point.
Not making Osso Bucco. Making a large pot of corned meat for hash and boiled dinners.
