Salmon Chowder

Mrs BF skipped town, and after a couple of nights eating burritos, I thought Salmon chowder sounded good. My brother keeps posting pictures like this

and his misses likes to can them up. She gave us a case fresh jarred Russian river reds.

Started with these ingredients and a beer.

10 ounces, no nitrate bacon
1 onion, diced
2 carrots, sliced
1 red pepper, diced
4 potatoes, diced
1 jalepeno, diced
2 cloves garlic, diced
2 tablespoons coconut flour
32 onces, un-salted chicken stock
1 13.5 oz can un-sweetend coconut milk
1 teaspoon salt
1 teaspoon pepper
1 teaspoon paprika
2 teaspoon dried dill
1 8.75 can corn
home canned salmon, about 16 ounces
fresh lime

Cook bacon in a big pot until crispy, remove bacon and then set aside.
Add all chopped veggies to bacon grease and sauté. I went about 15 minutes.
Add coconut flour and stir. Pour in chicken stock, coconut milk, and all spices, stir and bring to a boil.
Crumble bacon up, toss it in.
Reduce heat and cover. Simmer 30 minutes, or till veggies are as you like them.
Add the salmon and can corn. Simmer another 15 minutes.
Ladle into bowl, squeeze in lime.

Tasty Salmon Chowder
 
Looks and sounds delicious. I have some salmon in the freezer I was going to smoke. Might have to throw some in this chowder recipe as well. Thanks for sharing
