Linguica sausage

I haven't found any since I moved to N. Ohio & I'm really Jonsing for a Linguica & Cheddar sandwich for breakfast. It looks like I'm going to have to do it the hard way if I can't find it anywhere else. SW GA on a pig hunt this fall.

Anyone have a fav recipe on how to make it ?

Bread? Any soft hoagie type roll. I prefer Italian.

Cush's recipe mentions bear as an alternative. I can totally see that as primo sausage.

Uhhhh....anybody got 5 pounds of bear meat they don't need ?????

Being part Portagee I am partial to Linguica sausage.I miss SLO,CA's Portugese Hall & the BBQ's.
Those guys & the Swiss Italians had the smokers & pits down to a rustic science.
