I take the tongue and heart when I harvest my bull.
Cow tongue in our local supermarket is $25, and moose tongue
is just as tasty. To get the entire tongue, cut entry slits through
the bottom of the jaw. Do not cut the tongue out by opening the mouth.
That would harvest only about 2/3 of the tongue and the meatiest
portion is in the back of the mouth.

I like to grill moose heart.
If you don't like to eat moose heart, you can always add it to your burger bag
and no one will ever know after you grind it with your other cuts
for burger and/or sausage.
 
I love tongue sandwiches on rye bread with spicy mustard!! A lot of times I will do heart in the slow cooker. Sometimes I will stuff it and smoke it. Sometimes I just slice it and soak it in buttermilk, dredge it in flour and fry it in bacon grease with onions. You can't forget about the liver!! :cool:
