Debone the qaurters today and make sausage tomorrow. Will post updates along the way.

I ground the last of mine today. Today is the last day of the season, but the weather is going to keep me home it looks like. I just finished up a batch of jalapeno summer sausage a couple days back.

Looking forward to your updates.
 
That's what we've been doing all day today as well. Smoked sausasage, summer sausage, breakfast sausage, and hard salami.
 
Decided to throw some trout and catfish on the smoker while I had time.
