The taco soup recipit made me think of one of my favorites...

Green chili

1lb gound elk/venison
2-3 cans green chilies or use fresh and roast them on the BBQ you'll need about 1-1/2 to 2 cups if you go fresh. I perfer the whole canned chilies and dice them up, the ones that you buy diced usually have a lot of skin mixed in and they tend to be mush after everything is cooked. Safeway has thier own brand of roasted chilies that are about the best I've found.

2-16oz cans of chicken broth
16oz can of sweet corn
16oz can of hominy
large onion diced
3 cloves garlic minced
1/2 teaspoon cumin
teaspon of red peper flakes
salt and peper to taste

Brown burger with S&P, garlic, and cumin, drain off fat
add onion and chilies cook for 4-5 min
toss in everything else cook for 20-30 min.

serve with totilla chips or fresh tortillas.

I usually eat until I get sick.
 
I'm going to try this one on friday. Looks simple enough I can make it. Thats the way I like it :D
 
I make something similar, but I usually just use the meat, onions, green peppers (hot and mild) and sauce and put it over rice, sop it up with a corn tortilla or put it in a burrito with refired beans. I thicken the sauce, though.
