3/4 cup raisins
1/4 cup honey
3/4 tsp. cinnamon
1/2 tsp. salt
1 large baking apple thinly sliced
3 cups thinly sliced carrots
butter
chopped parsley
Combime raisins,honey, cinn. and salt in large bowl cut lemon in half add juice of 1 half to raisin mixture, thinly slice remaining lemon and reserve. Add apple and carrots to raisin mixture. Mix well. Turn into 2 qt. casserole. arrange lemon slices on top. cover and bake at 400 for 1 hour. to serve dot with butter and sprinkle parsley.
serves 6
We had this with ham on Easter and it was great.
