Need some game meal ideas

Lamb, but truth be told, I did it with pronghorn neck meat and it was great. Texture is the same, flavor is different.
That has been a go to for me for the last couple years. I've served shredded neck roasts to folks who don't regularly eat wild game and they thought it was fantastic.
 
Good idea! I make my own tortillas too.
If I may make a suggestion, the consume (con-soo-may), in my opinion, is best made when the dried chilis are lightly seared on a pan of butter, then boiled with veggies. Then, everything is slow cooked in a crock pot. Then, use the consume to dip your tortillas in and pan fry them that way (id use corn, flour will bloat a bit). Just be sure not to pan sear the chili for too long. It won't take much to burn unfortunately.
