I can't answer anything on the soreness. Meeker and Craig both have good processors, highly recommend Brothers custom meats in Craig, they used to have one in Meeker as well but I think that brother retired.
Another option is to contact a taxidermy transport company, in the fall there is a couple of them that run freezers or reefer trucks, about the same price as UPS. Can get your rack, Euro, and meat all at the same time. Guaranteed frozen. Get a hold of me if you want some info

Skull bracket comes with 2 lag bolts. You could get away dry wall anchors with a small deer, but in no way trust that for an elk, moose, sheep, or bison
