I'm still confused , the stats say 669 applied for 1st choise nr special gen tag in the random draw with no points , did all of those 669 get the tag ? -

Rifle caliber for elk?!
All of the calibers mentioned will do a fine job ,accuracy is the key , just my opinion but shoot the heaviest caliber you can shoot accurately , and if the elk is still standing keep shooting til he is on the ground. Out of the 3 choices you mentioned go with the 7 mag. By the way I love my... -

Pedestal mount with deadfall and brush with pine trees as base?
I'm a taxidermist , as a general rule I like to have pedestal mount animals eye level , their eyes the same height as your eyes off the floor, with elk with big antlers you have to adjust because of ceiling height , I think your 61" will be fine. -
